Method
- Roughly chop the dried fruit, figs & dates.
- Melt the butter in a big pot.
- Add the fruit, jam, plums, gin and sugar.
- Bring to boil and cook out on a simmer.
- Cook out the booze and reduce the liquid by half.
- Add the juice of orange plus a little zest.
- Allow to cool, fold through flour, spices juice, zest and almond meal.
- Whisk the eggs and fold through.
- Line a pan or bread loaf with paper, brush with butter, season with a little zest, salt and a few bay leaves.
- Pour the pudding mix into the pan.
- Cook at 150 degrees for 1.5 hours.
- Pop a skewer in the centre, if it comes out dry, it’s done!
