Smashed Cucumber Salad

Method

  • In a small bowl, mix the dressing ingredients together until the sugar is fully dissolved. Set aside.
  • Slice the cucumbers in half lengthways.
  • Gently smash the cucumber halves with a rolling pin or similar tool, creating a slightly crushed texture.
  • Cut the smashed cucumbers into 4-inch pieces on the diagonal.
 
  • Place the cucumber pieces and radishes in a mixing bowl.
  • Sprinkle with salt and toss to coat evenly.
  • Let sit for 20-30 minutes, allowing the salt to draw out excess moisture.
  • Drain well and pat dry with a clean towel or paper towel.
 
  • Transfer the drained cucumbers and radishes to a serving bowl.
  • Toss with the prepared dressing and a drizzle of chili oil, ensuring the vegetables are evenly coated.
 
  • Add radish tops and thinly sliced green shallots to the salad.
  • Give a final gentle toss to combine.
  • Serve immediately and enjoy your flavorful, refreshing salad!
